Healthy lunches

What is a normal lunch for you?

Do you have a packed lunch? A hot meal? A sandwich? A salad? A jacket potato? Something else or nothing at all?

When we are busy it can be easy to forget to stop and eat sometimes. I always try to have at least in my head, an idea of what we are going to eat when to avoid this, and also avoid any snacking instead of meal-eating.

I love salads, especially in the summer and what makes them great is that if you aren’t at home you can just take one in a plastic tub and eat it on the go…just don’t forget the fork (I used to do this all the time)…a bit like those days when you give the children a yoghurt in their lunchbox and forget to give them a spoon!

I love lots of different salads: Greek Salad; Chicken Caesar Salad and also I love a really good Nicoise Salad. Salads like this aren’t boring. They are rammed with goodness and flavour and really filling. I think some people just think lettuce when they think about salad but that isn’t how I see them at all. Like this one below… A tasty Greek Salad with kalamata olives, a drizzle of olive oil, a sprinkle of oregano and of course some feta cheese. Have a cold glass of cranberry juice on the side and you have a tasty but healthy lunch. Salads don’t just have to be leaves and the odd tomato. Have a play around with colours,  textures and flavours and see what you come up with.

I am also a big fan of jacket potatoes and try to remember to put these in the oven on a very low setting after breakfast so they are ready for lunchtime.

  1. Oh, I’m a salad fan too, but I hate preparing it!! I usually have a sandwich but bread is not my friend so I’m going to try using lettuce leaves instead of the bread!
