Using up left over Easter Eggs

The amount of Easter Eggs the children get each year is a little obscene. Each year I personally buy them less and less and they seem to end up with more and more.

They love to hunt for eggs much more than they actually like eating them. Sound familiar to anyone?

The big eggs that other people buy for them are so bulky to store we decided to use some of them up by baking with them this year.

The two oldest boys in particular love to bake, so they got to work smashing up some big Easter Eggs. In one bowl they just put milk chocolate and in a another bowl, a mixture of milk and white.

They melted the chocolate in the microwave and enjoyed mixing the warm runny chocolate whilst they discussed some possible creations.

They decided to make chocolate covered strawberries with the milk chocolate, so spent time dipping the strawberries before leaving them to one side to set.

With the mixed chocolate they crumbled some Mrs Crimble’s lemon cookies which are gluten free and very tasty and popped them into the mix. They then added chunks of another egg and mixed before spreading the mixture into a tin.

They popped it in the fridge to set for an hour and then I helped them to chop it into chunks. I guess it’s a version of rocky road which we enjoy making but we normally use marshmallows.

  1. What a good idea. We tend to eat the eggs really slowly throughout the year. I think there may even be some Christmas chocolate still lurking!

  3. Mmm yum! Yep, we tend to have leftovers even though we cut down every year on buying as i think they are terribly overpriced! I usually use the in some sort of fridge cake mmmm
