I recently spent a fabulous day in Soho with Angellica Bell celebrating the launch of the new chicken sausages by Richmond. Chicken Sausages are Richmond’s exciting new spin on the nation’s favourite sausage. To mark the launch, Richmond has teamed up with TV presenter and chef, Angellica Bell, to help recreate some of the nation’s favourite sausage recipes, with a chicken twist!

These sausages are super versatile, something I discovered during the time with Angellica and the Richmond team. We did a few hands on cooking sessions at the fantastic Good Housekeeping Institute Cookery School. We made some fantastic Yorkshire Puddings for the Toad in the Hole. We made homemade baked beans (Angellica’s recipe, which tasted amazing), and we tasted a range of yummy foods that Angellica made during the session.

What was quite clear during the session was just how versatile chicken sausages are. They are suitable for so many of the traditional and well-loved meals that families enjoy. I often make a sausage or sausage and bacon casserole in the slow cooker (especially during the winter months), with plenty of veggies it’s great on it’s own, but of course you could serve with pretty much anything from sweet potato mash to rice or homemade chips. This could easily be put together with the Richmond Chicken Sausages for everyone to enjoy.

  1. Baked Bean Pie – a layer of baked beans, sausage, bacon, onion, mushrooms – topped with mashed potato and a layer of cheese on the top! Served with Naan bread to mop up the bean juice! A real favourite here!

  2. Wrap them in the best all butter puff pastry that you can find in the shops. Bake them and take them on a picnic.

  3. Ultimate toad-in-the-hole with caramelised onion gravy. Wrap fat sausages in streaky bacon for a posh version of a British classic – perfect comfort food for the whole family.

  6. We love sausage and mash in our house! Think we’d go healthier with chicken sausages and sweet potato mash.

  7. Sausage and pasta! Cook pasta, cook sausages then chop into 3 pieces each sausage. Add chopped onion to tin tomatoes, heat up and add sausage and veg as desired. Pour over cooked pasta and serve.

  8. My wee boy loves sausage and bean casserole usually made with pork and chorizo sausages but I think chicken sausages would make a nice change from pork and would work well. I made the sauce with passata and peppers and blitz it up so he gets the veg and doesn’t pick it out and I add a couple of different varieties of beans too which would go well with the chicken sausages. Yum!
